What inspired you to bring your Italian culinary expertise to Portugal, and how do you incorporate elements of both Italian and Portuguese cuisine into your dishes?
Inspired by the rich culinary traditions of both Italy and Portugal, I was drawn to explore the essential of these two vibrant cuisines. Italy’s emphasis on fresh ingredients, bold flavors, and handmade pasta techniques perfectly complements Portugal’s love for seafood, aromatic spices, and hearty stews.
In my dishes, I aim to marry the best of both worlds by incorporating elements such as Italian pasta paired with Portuguese seafood.
“This combination allows me to create a culinary experience that honors the authenticity of both Italian and Portuguese cuisines while offering a fresh and exciting perspective.”
Winning the title of the best Italian restaurant in Portugal is an impressive accomplishment. Can you share some of the secrets behind your restaurant’s success and what sets your cuisine apart from others?
To be recognized as the best Italian restaurant in Portugal is an honor, testifying to the excellence of our commitment to bring authentic Italian cuisine here in Portugal.
Our success stems from the finest quality ingredients, meticulous attention to detail, and constant innovation while staying true to traditional recipes.
What sets us apart is our insistence on the pursuit of simplicity and authenticity of Italian culture through our dishes. Drawing inspiration from the essence of Italian culinary traditions ensures a dining experience that transports guests to Italy.
Italy is renowned for its regional culinary traditions. How do you showcase the diverse flavors and ingredients from different Italian regions in your menu, and how do you adapt them to suit the Portuguese palate?
At our restaurant, our main goal is to take our customers on a culinary journey through Italy, from north to south, via our menu. Guests can explore the flavors of Veneto with dishes like baccalà mantecato and tiramisù, indulge in the iconic ravioli and tagliatelle of Emilia Romagna, savor the classic spaghettoni cacio e pepe and saltimbocca alla romana from Lazio, experience the freshness of Puglia with burrata and orecchiette, and enjoy the taste of the sea with spaghetti alle vongole and traditional Neapolitan babà.
Each dish represents the authentic flavors and culinary traditions of its respective region, allowing our guests to embark on a gastronomic adventure across Italy without leaving their table.”
We adapt these flavors to suit the Portuguese palate by blending Italian and Portuguese culinary traditions by incorporating familiar Portuguese ingredients and cooking techniques into our Italian dishes while maintaining their authenticity.
For instance, we infuse traditional Italian recipes with local seafood or local vegetables to create a unique blend of flavors that appeals to our Portuguese guests.
In a country known for its rich culinary heritage like Portugal, how do you stay true to your Italian roots while also embracing the local food culture and ingredients?
Can you tell us about any signature dishes on your menu that exemplify the essence of both Italian and Portuguese cuisine, and what makes them stand out to diners?
In a country renowned for its culinary heritage like Portugal, staying true to our Italian roots while embracing the local food culture and ingredients is essential to our approach.
We achieve this delicate balance by maintaining the authenticity of our Italian recipes and culinary traditions while incorporating locally-sourced ingredients and flavors that complement our dishes.
Our signature dishes, such as Baccalà Mantecato, feature a harmonious blend of Italian and Portuguese ingredients and techniques. We use locally-sourced Portuguese bacalhau, a well-known ingredient, and combine it with the traditional Italian technique to create this dish, served alongside authentic Italian polenta.
Another standout is our Spaghetti alle Vongole, where we pair dry pasta from Gragnano, Italy, renowned for its quality, with freshly sourced Portuguese clams.
These signature plates exemplify our commitment to celebrating the best of both Italian and Portuguese culinary traditions.
